Hi Friends,

I am back with a Hawker Style Thai Recipe - vegetarian this time as per requests from close friends who are vegans.  

If I am not mistaken a lot of youngsters gl are turning into vegans as for health reasons.  You must be wondering why do I always give Hawker style recipes, as I know and you may also agree with me that this street food is tastier and we all relish it.


So here we go:

Vegetarian Yellow Curry BBQ Skewers

A lovely snack of various colourful, healthy veggies that are blended and marinated in yellow curry, and grilled to perfection! Try this vegetarian yellow curry BBQ skewers recipe
Cooking Time: 30mins - 60mins
Serves: 3 to 4
Cuisine: Thai

INGREDIENTS

24 cubes Paneer Cheese
4 small Zucchini, sliced thickly
1 Red Capsicum, Cubed
3 sml Red Onions, cut into quarters
24 Baby Roma Tomatoes

Marinade

3 Tblsp Yellow Curry Paste (Recipe given below)
1 cup Coconut milk
2 Tblsp Soya Sauce
4 Kaffir Lime Leaves, finely sliced

Recipe for easy Thai yellow curry paste (this can be stored in a bottle in the fridge) and used for other curries also. (serves: 2 cups curry paste)

INGREDIENTS
4 large shallots
4 large heads of garlic (not individual cloves - FULL HEADS of garlic)
1 6-inch piece of fresh ginger
5-20 whole dried chili peppers** (they're very small and usually found in the spice section)
1½ tablespoons salt
2-3 tablespoons turmeric
2-3 tablespoons mild curry powder
(Curry powder is a mixture of finely ground spices, such as turmeric, ginger, and coriander, used for making curry)
2 teaspoons roasted ground coriander
3 tablespoons lemongrass paste
¼ cup packed cilantro leaves and stems

Curry Paste

INSTRUCTIONS

1. Thread Paneer cheese, zucchini, red capsicum, red onions and tomatoes onto wooden skewers alternately.
2. Whisk the marinade ingredients together in a bowl until well combined.
3. Place skewers into a shallow non-metallic dish and pour over marinade.
4. Marinate for 20 minutes or overnight turning frequently.
5. Pre-heat BBQ or Griddle pan on a medium heat and cook skewers for 6-8 minutes turning and basting frequently.
6. Serve hot garnished with fresh coriander leaves and lemon wedges with a side salad and warm naan bread.
7. Your vegetarian yellow curry BBQ skewers dish is ready!

Notes: Paneer cheese maybe replaced with tofu, chicken or prawns.
  
PS: I have given you simple recipes of yellow curry paste and curry powder as I do not wish you to face any difficulties while trying this recipe.
