What is the
meaning of Lahori Tawa Chicken?
Lahori Tawa Chicken is a speciality dish from Pakistan. It's made
with chicken that's marinated in a mixture of spices and then cooked on a
skewer over an open flame, or steamed and deep fried or on the tawa resulting as
a charred and juicy chicken that's bursting with flavours.
Don’t use any
water while preparing the masala.
Instead of
chicken you can add your favourite veggies or lamb and can prepare this tikka.
Rest it a least half an hour to 1 hour.
Use Kashmiri
chilli powder which gives a nice colour to the tikka

Ingredients
·
500 gms boneless cut into
cubes
·
1 medium onion sliced
·
1 medium tomato sliced
·
Half medium capsicum sliced
·
3 tbsp oil
·
2 tbsp ginger garlic paste
·
1 tsp cumin powder (jeera)
·
1 tsp coriander powder
(dhania)
·
Half tsp Tandoori masala
·
Quarter tsp turmeric powder
(haldi)
·
2 tsp tomato puree
·
Quarter cup chopped green
coriander leaves
·
2 tsp kasoori methi (dry
fenugreek leaves)
·
1 tsp garam masala powder
·
1 juice of lemon
·
Salt, pepper and red chilli powder as
per taste
·
Oil and 1 tbsp butter
Method:
Clean and cut the
chicken into medium size cubes.
Take a wide bowl and add the chicken pieces along with red
chilli powder,, turmeric powder,
Kashmiri chilli powder, salt and tandoori
masala. Mix well so that the pieces are nicely coated with the masala.
Mix chicken with
yoghurt.
Heat a tawa or
flat-bottom pan. Add oil and butter.
Add in the
chicken pieces and sauté.
Add salt and
black pepper powder and roast them.
Once it begins to
leave water, add in the garlic paste.
Add the dry
masalas –Kashmiri red chilli powder, cumin powder, coriander powder.
When the spices
are roasting add whole red chilli
Mix well and cook until the
chicken is almost done. Add the tomato puree and mix.
Now add in the sliced onions, tomatoes,
capsicum, and chopped green coriander leaves. Mix well.
Finish with crushed kasoori methi,
garam masala powder, and lemon juice. Mix well.
Add the rest of the yoghurt and let the
chicken to roast.
Then add half a cup of water and
cover the tawa
Cook it on medium flame till the
chicken is tender and then roast it.
Add green chilli,
some chopped ginger, coriander and lemon juice and set it to simmer.
The Tawa Chicken
is ready to serve. Garnish with ginger juliennes and chopped coriander leaves.
Serve hot with lemon wedges.
