Thai Red Chicken Curry

This is a quick and easy curry stir-fry made with chicken, zucchini, red bell pepper and carrot. Coconut milk and curry paste make an irresistible sauce. 
No need to go out to eat, as this dish is ready in about 45 minutes!

Making your own Thai Red & Green curry paste is also a great way to ensure that your dish is preservative and additive-free. 
While you can certainly use store-bought paste instead of homemade pate, it is best to make your curry paste from the beginning.

Besides making this curry with chicken, pork or fish you can also add your choice of vegetables, but keep in mind that certain vegetables 
like zucchini and capsicum require much less cooking and might be better added nearer to the end of cooking. 

As for Vegans besides vegetables, you can also add baby corn too and fresh mushrooms too.
