SINGAPORE STYLE PEPPER CHICKEN

A very simple and easy to make pepper Chicken which goes very well with Chapathi, Naan and Rice. Just some basic ingredients are used here. You can add bell peppers, but I have not used them here. Soft chicken pieces covered in a thick black pepper sauce. Remember to freshly crush some pepper to get that extra zing.
Ingredients:
  • Chicken cubed- 2 cups
  • Onion- 1 small chopped
  • Ginger/ garlic- 1 tbsp grated
  • Pepper crushed- 2 tbsp (I use my mortar and pestle)
  • Pepper sauce- 2 tbsp (optional)
  • Soy sauce- 1.5 tsp
  • Spring Onion- 1 tbsp
  • Corn flour- 1tbsp
  • Oil- 3 tbsp
  • Chicken stock- 1/2 cup
Method:
  • Marinate the chicken with corn flour,  1 tbsp pepper, salt and 1/2 tbsp ginger garlic paste.
  • Heat oil in a skillet or non stick pan.
  • Fry the chicken pieces for five minutes and keep aside.
  • Add the ginger garlic paste and the chopped onion. You can add red and green capsicum at this point if you want to make it more colourful.
  • Cook for few minutes and then add the crushed pepper and the sauces.
  • Add the chicken stock and when it bubbles add in the fried chicken pieces.
  • Simmer until the gravy is thick and well coats the chicken pieces.
  • Switch off the flame and garnish with chopped spring onion.
